Summary : The main objective is to identify potential biomarkers of production of organic beef reared under different production systems -under organic regulations- that ensure ethical production of meat, as an added value to its overall quality, and propose packaging systems based on the use of bioactive compounds obtained from plants of the Dehesa ecosystem for extent the shelf-life and food safety of meat produced under organic systems. This main objective has the following specific objectives: Objective 1. - To study the influence of the production system (CCI, ECI, EPE) and the composition of the feed on productive parameters in Retinto calves. Objective 2. To study the influence of the production system (CCI, ECI, EPE) on the phagocytic capacity of neutrophils in the innate immune response. Objective 3. To study the influence of the production system (CCI, ECI, EPE) on systemic biomarkers that mediate the response imunitaria and that are directly related to production conditions: indicators of stress response (cortisol), oxidative (AGI and tocopherols) and regulators of inflammation (IL-6). Objective 4. To study the influence of the production system (CCI, ECI, EPE) on other cellular biomarkers (hematocrit and the ratio neutrophils: lymphocytes), energy metabolism (lactate and glucose), enzymes (LDH and creatinine kinase), inflammatory processes (Haptoglobin, C-reactive protein, amyloid protein A) and muscle (lactic acid, glycogen, pH). Objective 5. To characterize the meat (m. Longissimus dorsi) and fat: chemical composition, instrumental characteristics and technological characteristics. Objective 6. To obtain bioactive extracts from plant material from the Dehesa with antioxidant and antimicrobial activities potentially for use in meat packaging. Objective 7. To evaluate antioxidant and antimicrobial bio-activities of plant extracts obtained for its use in meat packaging Objective 8. To apply bioactive plant extracts for the packaging of organic beef to increase its shelf-life and food safety. Objective 9. Dissemination of results obtained throughout the project both scientific and informative in the production sector of organic meat and organic consumers.
