Summary : 1. Evaluation of the potential quality of virgin olive oil from olive cultivars grown under organic and conventional methods in the central area of Spain (Comunidad de Madrid): evaluation of the effect of agronomic practices on the quality of virgin olive oil produced. 2. Determination of the optimum harvesting date on the olive cultivars in study in the particular pedo-climatic conditions of the central part of Spain 3. Physicochemical and sensorial characterization of virgin olive oils produced from the olive cultivars in study. 4. Determination of critical points of quality loss in the oil mills, in order to optimize the oil production 5. Production of coupages or multi-varietal oils based in Cornicabra variety, with a high customer satisfaction index and good nutritional properties.
