In order to augment the satisfaction of peach and nectarine consumers, we have plan the following objectives:
1. To develop the best preconditioning (delayed cooling) treatment for two of the most important peach (Rich Lady and Sweet Fair) and nectarine (Big Top and Venus) cultivars.
2. To determine the best storage technology (CA-atmosphere, storage period and shelf-life period) for two of the most important peach (Rich Lady and Sweet Fair) and nectarine (Big Top and Venus) cultivars.
3. To classify 18 peach and nectarine cultivars in different groups depending on their organoleptic attributes, and correlate these sensory characteristics with their physicochemical characteristics measured instrumentally.
4. To establish the cold storage potential of the peach and nectarine cultivars previously classified in the aim 3.
