Abstract: The French seafood and food processing industries are strongly rejecting claims made by a recent TV program alleging the use of fraudulent practices. The France 5 report highlighted the alleged use of chemicals such as phosphate and the injection of water into fish, particularly cod, served at French dinner tables. French media attention on the broadcast focused on the practice of shipping Norwegian cod to China for processing where water may be injected to add weight to fish, potentially making it more expensive for consumers. Using a hidden camera, undercover France 5 reporters posing as fish buyers spoke to Chinese industry representatives who revealed some of their practices at the Brussels Seafood Expo. Reporters were offered cod injected with water to increase weight and also phosphates aimed at making fish appear whiter.
